Tokubetsu means “special” in Japanese, and Hakkaisan “Tokubetsu Junmai” is special indeed, with a bit of extra polish on the rice compared to a regular junmai. With a clean, satisfying taste tailored to compliment many foods, this sake will easily become a house favorite.

This beautiful Junmai Ginjo is aged for a minimum of 3 years in Hakkai Brewery’s snow-storage room, called the Yukimuro. The flavor is initially subdued, before it unfolds the rich and solid sake that it is. While nestled comfortably in tanks chilled by literal tons of pure white snow, it develops into a round and smooth sake with a subtle and fine aroma and a mellow, dry finish.

The clear mineral-rich water from Ibo River is used by Tatsuriki for both growing the rice used in the sake, the sake itself. The same river feeds into the Harima Nada sea where oysters prosper thanks to the nutrients provided by the Ibo River. This coastal area on the edge of Hyogo is known for their thriving oyster production. Honda Shoten has created an excellent sake to match these famed oysters. The subtle banana aroma and sweetness of the sake rounds the following flavors of the oyster, and the delightful acid specific to Shinriki sake rice reveals a refreshing aftertaste.

Brewed with a traditional sake brewing method, Den features a fruity aroma and distinct rich flavors. This sake has the true characteristics of a Junmai Daiginjo. Its crisp and clean umami stands out clearly and lingers as a distinctly mouthwatering aftertaste. It is an excellent choice to pair with tuna and salmon sushi/sashimi. It also goes well with meat and meat dishes prepared in both Japanese and western style. Den means "tradition," referring to the traditional way this sake is brewed. The name Den also can mean "to convey" thoughts and feelings.

Gentle and refined aromas with a well-rounded flavor. Smooth and slightly dry with a quick and acidic finish. Aged for 6 months after bottling, giving it complexity and character. Katsuyama has made high-end sake for the nobleman since 1688, and was founded by the famous military commander and samurai, Date Masamune. “Ken” means to “present a gift”.

“Taru sake” is stored in barrels, which is often reserved for special occasions, but the brewers think it’s so good they decided to produce this sake to be enjoyed anytime. This sake is stored in cedar barrels made in house at Kikumasamune, using cedar from sustainably maintained Yoshinosugi area. The flavor is a bit smoky with umami in the front and some lingering spiciness in the back.

Sometimes different countries have different sake preferences. In the case of this sake, that saved its life! In Japan, this sake was being discontinued, but it became a hit with U.S. sake drinkers, so they kept it around. Luckily for us, we get to experience its silky-white texture and fruity aroma thanks to their original yeast. Goes well with yakiniku (Japanese grilled meat), having enough sweetness and texture to enhance your meal.

Sometimes more can be achieved with less. It seems to be the case with SAKARI Junmai Daiginjo: by polishing off half of the rice grain, the true and rich taste of rice can come through. Full-bodied and mellow, with the robust flavor of rice and a tropical fruity aroma (Ginjo aroma) bursting with freshness. The aroma is created using Nihon Sakari's original yeast and the rich flavors and texture come from leaving this sake unpasteurized. Vegetarian, Gluten-free, and Preservative-free!

The town of Aridegawa's Sansho Peppercorns - this small Wakayama prefecture town's specialty -  are used in luxurious excess to brew this unique pale ale. Sansho pepper is one of Japan's most popular spices after wasabi, and it lends a unique flavor and mouthfeel to dishes similar but distinctly separate from the numbing sensation of it's cousin the Chinese Szechuan peppercorn.

With such cute branding, you almost expect this to be sweet, but the initial impact is so mouth-puckering sour, this yuzu sake will get you hooked. Locally grown yuzu juice and skin are all blended, then balanced with a sake base using very soft water, relying only on natural sweetness. It’s great for pairing with firm cheese, sweet and sour pork, and key lime pie.

“Occidental” is a single yeast junmai. At the end of the fermentation process (post pressing), the sake is gently dry-hopped to extract the hop aroma and character. The result is a bright, aromatic (lots of tropical fruit), and dry sake that is light bodied and refreshing.

The name “Densho” comes from the legacy of Suehiro Brewing Company being taught the secrets of the yamahai method from Kinichiro Kagi who discovered this process around the turn of the century. This sake boasts a creamy texture with ample umami and superbly balanced acidity that makes it so easy to drink we can’t get enough. Extremely food friendly, and recommended warm, on a flat ceramic vessel if you have one.

The nose on this very special Junmai Ginjo sake is filled with earthy, ricey, honey, and leathery elements. Welcome to a sake that explains a rice varietal. Welcome to Omachi rice sakes. "Black Bull" is a wonderful expression of how Omachi rice works in the sake world. This extremely well-balanced sake is supremely rich and very full-bodied. Red wine lovers take note, as there are many layers of rice tones all over the place. Each glass is an example of the depth and grace of an Omachi rice sake that is vast and solid, and reminds one that drinking sake is drinking rice and not fruit. It is a hearty sake that has enough um-pah-pah to stand up to a ton of large flavored cuisines, but is also very drinkable on its own. .

The nose on this very important bottle of sake is a crafty collection of pear, mango, lemon peel, pineapple, and a hint of savory cocoa and rice aromas. Made by Maiko Tsuji, a female master brewer who wanted to honor the Omachi rice varietal (discovered in 1859) by using the traditional Bodaimoto method of sake making. Behold, a sake that is superbly flavorful and has a very unique body and drinking texture.
