HAKKAISAN
Yukimuro Aged 3 year

This beautiful Junmai Ginjo is aged for a minimum of 3 years in Hakkai Brewery’s snow-storage room, called the Yukimuro. The flavor is initially subdued, before it unfolds the rich and solid sake that it is. While nestled comfortably in tanks chilled by literal tons of pure white snow, it develops into a round and smooth sake with a subtle and fine aroma and a mellow, dry finish.

TATSURIKI
Oyster's Friend Tokubetsu Junmai

The clear mineral-rich water from Ibo River is used by Tatsuriki for both growing the rice used in the sake, the sake itself. The same river feeds into the Harima Nada sea where oysters prosper thanks to the nutrients provided by the Ibo River. This coastal area on the edge of Hyogo is known for their thriving oyster production. Honda Shoten has created an excellent sake to match these famed oysters. The subtle banana aroma and sweetness of the sake rounds the following flavors of the oyster, and the delightful acid specific to Shinriki sake rice reveals a refreshing aftertaste.

Brewed with a traditional sake brewing method, Den features a fruity aroma and distinct rich flavors. This sake has the true characteristics of a Junmai Daiginjo. Its crisp and clean umami stands out clearly and lingers as a distinctly mouthwatering aftertaste. It is an excellent choice to pair with tuna and salmon sushi/sashimi. It also goes well with meat and meat dishes prepared in both Japanese and western style. Den means "tradition," referring to the traditional way this sake is brewed. The name Den also can mean "to convey" thoughts and feelings.

Ken Junmai Ginjo

Katsuyama has made high-end sake for the nobleman since 1688, and was founded by the famous military commander and samurai, Date Masamune. “Ken” means to “present a gift”.

“Taru sake” is stored in barrels, which is often reserved for special occasions, but the brewers think it’s so good they decided to produce this sake to be enjoyed anytime. This sake is stored in cedar barrels made in house at Kikumasamune, using cedar from sustainably maintained Yoshinosugi area. The flavor is a bit smoky with umami in the front and some lingering spiciness in the back.

The nose on this very special Junmai Ginjo sake is filled with earthy, ricey, honey, and leathery elements. Welcome to a sake that explains a rice varietal. Welcome to Omachi rice sakes. "Black Bull" is a wonderful expression of how Omachi rice works in the sake world. This extremely well-balanced sake is supremely rich and very full-bodied. Red wine lovers take note, as there are many layers of rice tones all over the place. Each glass is an example of the depth and grace of an Omachi rice sake that is vast and solid, and reminds one that drinking sake is drinking rice and not fruit. It is a hearty sake that has enough um-pah-pah to stand up to a ton of large flavored cuisines, but is also very drinkable on its own. .

It’s surprisingly versatile, complementing fruit, aged cheese, and stewed or simmered meat.
